Strawberry Basil Smoothie
It’s chilly this time of year and if you’re like me, you’re longing for Summer sunshine! This smoothie will brighten up your morning in a flash. It only takes minutes to prepare and you’ll be feeling fresh the rest of the day.
There’s just something about the combo of tomato and basil that brings me joy. Maybe it’s my love of Italian food or the aromatic smell of fresh basil picked from our little herb garden on the front porch. Whatever it is, it surprisingly plays nicely with strawberries. I know what you’re thinking, and yes, I was skeptical at first as well. Once you make this smoothie you’ll wonder how you ever lived without it. Did I mention it’s ready in minutes?!
Ingredients
Yield: Two 16-ounce servings
- 2 cups frozen strawberries
- 2 cups cherry tomatoes
- 3 dates
- ½ Avocado
- 1 Lime, juiced
- ¼ cup basil
- 1 cup coconut water
Directions
1. Measure out all of your ingredients
2. Wash the basil and the cherry tomatoes
3. Remember to take the pits out of the dates
4. Juice the limes
5. Add all of your ingredients to the blender and blend until smooth

Tip of the day
Have you ever had a tough time slicing tomatoes with your regular chef’s knife or paring knife? Try using a serrated bread knife next time for easier slicing and less frustration!
