I decided to get creative on a Friday night and put together a Labour day weekend recipe that would cater to those who are under gluten and/or vegan dietary restrictions.
I am pleased to say that the result was delicious!
Introducing the chef and his Maple Flax Banana Bread creation
My mediocre photography and food presentation skills betray the great taste, trust me!
Here is what you need:
2 cups Bob’s Red Gluten Free Oat Flour
1 tsp baking soda
2 tbsp ground flax seed mixed with 1/4 cup Soy/Almond Milk or Water
1/2 cup mashed avocado ( ~ 2 small or 1 large avocado)
1/2 cup 100% Maple Syrup
2 cups mashed ripe Bananas
1 tsp cinnamon
Instructions:
1. Preheat oven to 350 F
2. Mix oat flour , baking soda and maple syrup in one bowl
3. Mash bananas and avocados in a different bowl other and add flax mixed with water or soy milk, and whisk fully.
4. Combine the bowls together, add cinnamon and whisk until consistent
5. Place in oiled loaf pan and bake at 350 F for 60 minutes
That’s it!
